Preheat oven to 350 degrees. Spray the loaf pan with cooking spray and set aside.
Whisk butter, applesauce and sugar in a large bowl until smooth. Add in mashed bananas, vanilla, baking soda and salt, beating until well combined. Then, beat in the honey and eggs.
Add the flour and stir until smooth; do not over-mix.
Pour batter into greased loaf pan and smoothen the top. Bake at 350 degrees F for about 50 minutes to an hour. Then gently place a piece of aluminum foil across the top, to prevent over-browning. Check bread by doing the toothpick test.
Remove from pan and cool on a rack. Enjoy!
